Notes contain general textual information relating to a resource.1
The online form element appears as below:

This form element allows the user to enter the note information directly. You cannot enter the note type, but you can add the text of your note, which will appear as a general note in the final resource.
Other form elements for entering note information include the standard Notes element.

This data is encoded entirely in the MODS section of the SobekCM METS file.
